Jerusalem artichoke produces beautiful yellow flowers and an edible potato-like tuber that is highly prized by chefs around the world. Jerusalem artichoke is popular as a cooked vegetable in Europe. The tubers are rich in the carbohydrate inulin.
They are fantastic plants, blooming late in the season when other flowers have faded. French painter Claude Monet was captivated by the gorgeous blooms - memorializing them in a (now famous) 1880 oil painting.
